A hundred and fifty office workers on a lunch break is a different job from fifty guests in a backyard, and in Irvine it is the most common booking — one in three passes a hundred. The crew arrives 30–60 min before the first plate and the line opens on time; past 150 guests we book by phone so the right number of cooks and griddles come on the trailer. From the kitchen the crew takes the 57 south to the 5 or the 55, then Jamboree or Culver into town: Woodbridge, Northwood and Westpark measure 18.2–19.0 road miles, which is the flat $75 band; the Spectrum and Great Park side is 21.2 miles, the $125 band.
